How to Cook:
Bring 3 cups of water or stock to the boil, then slowly whisk in 1 cup of polenta. Stir constantly to avoid lumps. Simmer on low heat, stirring regularly for the first 10 minutes, and cooking for a further 25–30 minutes until soft and creamy. Polenta has a tendency to splatter when being cooked, so take care not to get in the firing line! For firmer polenta, let it cool in a tray before slicing and pan-frying or grilling.
