Spelt flour is lighter and nuttier than whole wheat flour with the bran removed. Spelt is an ancient cereal grain that has been cultivated for centuries; it is a close relative of wheat and does contain gluten. It’s easier to digest than other wheat flour and will give baked goods a lighter texture. This is an unrefined flour with no bleaching or additives and no sugar or salt added.
